Traditional Belgian Fries Recipe

Authentic Belgian fries: crispy, soft inside, a must-try from Belgian culinary tradition, prepared with double frying for perfect texture.
Belgian fries are world-famous for their perfect texture: crispy on the outside, soft on the inside. The secret lies in double frying at two different temperatures and using high-quality potatoes. In Belgium, fries are more than food — they're part of the national pride, served with artisanal sauces.

Ingredients:

  • 1 kg potatoes (Bintje, Agria or Maris Piper)

  • Vegetable oil or beef fat

  • Salt

  • Optional sauces (mayonnaise, andalouse, samurai)

Preparation:

  1. Prepare the potatoes: Peel and cut into 1 cm thick sticks. Rinse well to remove starch.

  2. Dry: Pat completely dry with a clean cloth.

  3. First frying: Heat oil to 140°C. Fry in batches for 5-6 minutes without browning. Drain.

  4. Rest: Let the fries rest for at least 30 minutes.

  5. Second frying: Heat oil to 180-190°C. Fry until golden and crispy.

  6. Season and serve: Add salt and enjoy with your favorite sauce.
