The Blanc de boeuf (beef white) will allow you to discover or find the true taste of real belgian fries ! Ideal for crisp and non-greasy fries.
Ingredients:
1 kg potatoes (Bintje, Agria or Maris Piper)
Vegetable oil or beef fat
Salt
Optional sauces (mayonnaise, andalouse, samurai)
Preparation:
Prepare the potatoes: Peel and cut into 1 cm thick sticks. Rinse well to remove starch.
Dry: Pat completely dry with a clean cloth.
First frying: Heat oil to 140°C. Fry in batches for 5-6 minutes without browning. Drain.
Rest: Let the fries rest for at least 30 minutes.
Second frying: Heat oil to 180-190°C. Fry until golden and crispy.
Season and serve: Add salt and enjoy with your favorite sauce.
