Pickled herring is a staple of Dutch cuisine, especially popular in spring and summer. This simple yet flavorful dish dates back to the Middle Ages, when Dutch fishermen began preserving fish in brine. Over time, the maturation technique was perfected, giving rise to the famous “Hollandse Nieuwe”, celebrated each June. The herring is served cold, topped with chopped onions and sometimes pickles, offering a burst of fresh, oceanic, and slightly sweet flavor. It’s ideal as a snack on warm days or during local festivities such as “Vlaggetjesdag”.

Ingredients

  • 4 pickled herrings (Hollandse Nieuwe)

  • 1 white onion, finely chopped

  • Pickles (optional)

  • Soft bread or Dutch rolls (optional)

Preparation

  • Place the herrings on a plate or parchment paper.

  • Sprinkle finely chopped onion on top.

  • Add pickles if desired.

  • Eat them as is, rolled up, or served in a bun.
