Speculoos are traditional Belgian cookies, famous for their warm blend of spices like cinnamon, cloves, and nutmeg. Originally tied to Saint Nicholas celebrations, they have inspired many delicious creations like the no-bake speculoos cake.
This dessert features a crunchy cookie base topped with a smooth, creamy filling — a perfect balance of sweetness and spice. A modern Belgian classic, perfect for any festive or casual occasion.

Ingredients:

  • 250 g speculoos cookies

  • 100 g melted butter

  • 250 g cream cheese (like Philadelphia)

  • 200 ml heavy cream

  • 80 g powdered sugar

  • 1 teaspoon vanilla extract

  • Optional: speculoos spread for decoration

Preparation:

  1. Base:
    Crush the speculoos into fine crumbs and mix with the melted butter.
    Press into the bottom of a springform pan (20 cm) and chill for 30 minutes.

  2. Cream filling:
    Beat the cream cheese with powdered sugar and vanilla.
    Whip the heavy cream until stiff peaks form.
    Gently fold the whipped cream into the cheese mixture.

  3. Assembly:
    Spread the cream over the cookie base and smooth the top.
    Chill for at least 4 hours (preferably overnight).

  4. Decoration:
    Top with melted speculoos spread or sprinkle with crushed cookies before serving.
