
Andalusian Gazpacho: Traditional Spanish Cold Soup
Andalusian gazpacho is a cold soup from southern Spain, especially appreciated during hot summer days. Made with ripe tomatoes, cucumber, bell pepper, garlic, and stale bread, it’s a Mediterranean classic that’s both refreshing and full of flavor. Easy, healthy, and delicious.
Ingredients (serves 4):

1 kg ripe tomatoes

1 cucumber

1 green bell pepper

1 garlic clove

50 g stale bread

3 tbsp extra virgin olive oil

2 tbsp white wine vinegar

Salt to taste

Cold water (optional)
Instructions:

Wash and chop all vegetables and garlic.

Soak the bread briefly in water if too hard.

Blend all ingredients until smooth.

Add olive oil, vinegar, and salt. Mix well.

Strain for a smoother texture if desired.

Chill for at least 2 hours before serving cold.
